Chicken Pad Thai

Pad Thai is a flexible Thai noodle dish which can be made with any vegetables that you might have in the fridge.
Ingredients
175 g Noodles, Rice, Dried, flat
5 spray(s) Cooking Spray, Calorie Controlled
1 medium Onion, All Types, peeled and finely sliced
2 clove(s) Garlic, finely chopped
1 individual Chilli, Green or Red, (preferably red), finely chopped
100 g Chicken, Breast, Skinless, Raw, cooked and shredded
2 quantity Lettuce, 2 heads of spring greens
1 g Broccoli, Green, Raw, small head, chopped into small florets
1 medium Egg, Whole
4 tablespoons Soy Sauce
1 medium Lime, Whole, juice from 1 medium lime
2 tablespoons Coriander, Fresh, (a small bunch) chopped
50 g Peanuts, Plain, chopped, to garnish (optional)
Instructions
- Cook the noodles as instructed on the packet. Meanwhile heat a wok or large frying pan and spray with the cooking spray. Add the onion and garlic and stir fry for 10 minutes, until just turning golden, adding a little water if they begin to stick.
- Add all the other ingredients down to but not including the egg. Stir fry for 10 mins until the vegetables have begun to soften.
- Push the vegetables over to one side of the wok and break in the egg to the other side. Allow the egg to cook for a minute and then stir to make a lightly scrambled egg.
- Stir in the vegetables and add the soy sauce and lime.
- Lastly toss in the noodles and coriander and heat through then scatter with the peanuts, if using, to serve.
