Weight Watchers Pad Thai Recipe


Chicken Pad Thai
 

Chicken Pad Thai

Pad Thai is a flexible Thai noodle dish which can be made with any vegetables that you might have in the fridge.

Ingredients

175 g Noodles, Rice, Dried, flat   
5 spray(s) Cooking Spray, Calorie Controlled   
 1 medium Onion, All Types, peeled and finely sliced   
 2 clove(s) Garlic, finely chopped   
 1 individual Chilli, Green or Red, (preferably red), finely chopped   
 100 g Chicken, Breast, Skinless, Raw, cooked and shredded   
 2 quantity Lettuce, 2 heads of spring greens   
 1 g Broccoli, Green, Raw, small head, chopped into small florets   
 1 medium Egg, Whole   
4 tablespoons Soy Sauce   
 1 medium Lime, Whole, juice from 1 medium lime   
 2 tablespoons Coriander, Fresh, (a small bunch) chopped   
50 g Peanuts, Plain, chopped, to garnish (optional)   

Instructions

  • Cook the noodles as instructed on the packet. Meanwhile heat a wok or large frying pan and spray with the cooking spray. Add the onion and garlic and stir fry for 10 minutes, until just turning golden, adding a little water if they begin to stick.
  • Add all the other ingredients down to but not including the egg. Stir fry for 10 mins until the vegetables have begun to soften.
  • Push the vegetables over to one side of the wok and break in the egg to the other side. Allow the egg to cook for a minute and then stir to make a lightly scrambled egg.
  • Stir in the vegetables and add the soy sauce and lime.
  • Lastly toss in the noodles and coriander and heat through then scatter with the peanuts, if using, to serve.

Recipe Tips to Make Your Mouth Water

Spicy Basil Thai Pasta



Thai is one of my favorite foods. The spice is unlike any other, spicy but with a lot of flavor. Thai pasta doesn’t require a lot of sauce which I like. This pasta is a very easy recipe to make as long as you boil the noodles right! Any extra time may make them mushy. It is a nice way to spice up the dinner table during the week.

Spicy Basil Thai Pasta

Yields: 4 servings
Ingredients
  • 1 pack of Thai noodles
  • 2 Bell Peppers (red & green) cut into strips
  • 2 chicken breasts cut up
  • Sauce:
  • 2 Tbsp vegetable Oil
  • 2 Tbsp finely chopped white Onion
  • 2 tsp minced Garlic
  • 2 tsp minced Ginge
  • 1/2 cup chicken Stock
  • 2-4 Tbsp Asian garlic-chile sauce
  • 2 Tbsp. Soy sauce
  • 2 tsp Fish sauce
  • 2 Tbsp Sugar
  • 1 bunch of fresh Basil
  • 2 tsp Cornstarch dissolved in 1 Tbsp water.
Cooking Guide
  1. PREPARE SAUCE FIRST: Heat vegetable oil in a medium pot over medium-high heat.
  2. Add onion, garlic, ginger and cook until tender.
  3. Add chicken stock, Asian garlic-chile sauce, soy sauce, and fish sauce and bring to a boil.
  4. Add sugar and stir until dissolved, about 1 minute.
  5. Add chopped basil and cornstarch dissolved in water.
  6. Continue to cook until slightly thickened.
  7. Take off heat and set aside.
  8. Boil pasta for 3 minutes.
  9. Once the time is up place in strainer and run cool water over it and set aside.
  10. Saute cut up chicken in skillet.
  11. Add the strips of bell peppers and saute until desired crunch or tenderness.
  12. Add noodles and toss.
  13. Add Sauce and Serve.

Easter Fish With A Tang!

I hope you are all enjoying your Easter weekend, and are spending with family and loved ones.  Easter as we all know is a special time, it is a time when we remember what Jesus Christ put himself through just to 'save mankind'.  It's also a time when LENT is over, so for those of you who had to give up something during lent (40 days), your time is almost over.   For others its a time of waiting for the traditional Easter Eggs, lots of chocolate, eater egg hunts and the like to look forward to.

In our family, traditionally on Easter Friday we tend to eat fish.  Normally my mother who is from a West Indian background would do some Escovitch Fish and we would have this with some traditional 'hard dough bread'.  But this year I kind of broke with tradition and together with my partner Glenn, we made a fish dish from Levi Roots cook book  " Hot Roast Snapper with Coconut Salsa".   This was so straight forward to do, and cooked in a healthy way, definitely good food you can eat if you want to keep track of your calories.

So I thought I would share the recipe and a video showing off our efforts...

Hot Christmas FoodTips

 Seared Wild Salmon With Mango Salsa


Preparation Time: 15 Minutes / Marinating Time: 1 hour
Cooking time 15 minutes / Makes 6 servings
Calories: 364 one serving = 32g protein, 15g carbohydrates, 20.5g fat, 3.5gsaturated fat, 83mgcholesterol, 267mgsodium, 5g fiber


Salsa
1 Ripe mange, pitted, peeled and diced about 1 1/2 cups
1/2 cup chopped red bell pepper, seeded
1/2 cup chopped red onion
2 tablespoons chopped fresh mint
3 tablespoons freshly squeezed lime juice
2 tablespoons finely chopped jalapeno chill pepper (wear plastic gloves and keep hands away fromeyes when handling fresh chilli peppers) 
1/4 teaspoon salt

Salmon
1/4 cup freshley squeezed lemon juice  (about 2 lemons)
1/2 teaspoon paprika
1/4 teaspoon salt
2 wild salmon fillets
1 tablespoon olive oil
MUFA: 1 1/2 cups mashed avacado
  
Preparation:
  1. To prepare the salsa: In a small bowl, toss together the mango, bell pepper, onion, lime juice, mint, chilli pepper and salt.  Cover and chill at least 1 hour to blend flavours.
  2. To prepare the salmon:In a large shallow baking dish, combine the lemon juice paprika and salt. Place the salmon in the dish and flip to coat both sides.  Marinate,covered for up to 1 hour in a refrigerator. 
  3. Remove the fillets from the marinade. Discard the marinade.  Heat the oil in a large nonstick skillet over medium-high heat.  Sear the fillets for 15 minutes, turning once, or until opaque. On each of 6 places, place 1/3 fillet of salmon topped with 1/2 cup of salsa and 1/4 cup of avocado.
